1. Cook the Pasta
Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside. The reserved pasta water will help thin out the sauce later if needed.
2. Prepare the Chicken
Pat the chicken pieces dry with a paper towel—this ensures a good sear. Season with salt, pepper, paprika, and Italian seasoning, tossing to coat evenly.
In a large skillet, heat olive oil over medium-high heat. When the oil is shimmering, add the chicken in a single layer (you may need to cook in batches to avoid overcrowding).
Sear the chicken for 2–3 minutes per side, until golden brown and cooked through. The chicken should reach an internal temperature of 165°F (74°C).
Once cooked, remove the chicken from the pan and set aside on a plate.
3. Make the Garlic Butter Sauce
In the same skillet, reduce the heat to medium. Add 3 tablespoons of butter. Once melted, add minced garlic and sauté for about 30 seconds, just until fragrant.
Return the cooked chicken to the skillet, toss to coat in the garlic butter, and cook for another minute. Remove from heat and cover to keep warm while you prepare the pasta sauce.
4. Make the Creamy Parmesan Sauce
In a separate large skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer gently for 3–4 minutes until slightly thickened.
Gradually whisk in the Parmesan cheese, stirring continuously until melted and smooth. If the sauce seems too thick, stir in a few tablespoons of the reserved pasta water until it reaches your desired consistency.
Season with salt and pepper to taste.
5. Combine the Pasta and Sauce
Add the cooked pasta directly into the sauce, tossing to coat evenly. Let it simmer for another minute or two so the pasta absorbs some of the creamy goodness.
If needed, add a splash more pasta water to loosen the sauce. The goal is a silky, glossy finish that clings perfectly to the noodles.
6. Serve
Transfer the creamy Parmesan pasta to a serving platter or individual plates. Top generously with the garlic butter chicken bites, spooning over any leftover buttery juices from the pan.
Sprinkle with fresh parsley for a pop of color and a hint of freshness. For extra decadence, finish with a light dusting of grated Parmesan.
