After a long workday, this has become my back pocket dinner. My family inhaled it the first time and now it is on constant rotation every month.
Ingredients
- Chicken breasts: tender and lean look for ones that are even in thickness for the juiciest bites
- Small or medium potatoes: these crisp up fast smaller Yukon golds are my favorite
- Olive oil: adds richness use extra virgin for the best flavor
- Salt and pepper: essential base for seasoning brings out all the flavors
- Garlic powder and minced garlic: double dose for bold garlic in every bite
- Paprika: adds warmth and color opt for sweet rather than smoked
- Butter: brings richness and helps the chicken brown
- Onion powder and Italian seasoning: gives savory depth with herby notes
- Buffalo Wild Wings Garlic Parmesan Sauce: makes this recipe so delicious
- Shredded mozzarella cheese: melts beautifully look for whole milk mozzarella for the gooiest topping
Instructions
- Prep the Potatoes:
- Wash and peel the potatoes then cut them into small even cubes for perfect crisping. Toss well with olive oil salt pepper garlic powder and paprika so each potato gets coated. This helps them roast evenly and pick up flavor.
- Air Fry the Potatoes:
- Arrange potatoes in a single layer in your air fryer basket at four hundred degrees Fahrenheit. Cook for about twenty minutes shaking the basket a couple of times so all sides get golden and crispy. Taste one to be sure it is perfectly tender inside.
- Cube and Season the Chicken:
- Cut chicken breasts into bite-size cubes. Pat them dry with a towel so they brown well. Season all sides generously with salt pepper paprika onion powder and Italian seasoning. Press the seasoning in so it sticks for maximum flavor.
- Cook the Chicken:
- Set a large skillet over medium-high heat and add butter. When melted and foamy add the seasoned chicken. Sauté until golden on all sides and the internal temperature reaches one hundred sixty five degrees Fahrenheit which keeps it juicy.
- Finish with Garlic and Sauce:
- Lower the heat and stir in minced garlic. Sauté for about thirty seconds just until fragrant so it does not burn. Pour in Buffalo Wild Wings Garlic Parmesan Sauce and toss the chicken pieces until they are well coated.
- Combine with Potatoes and Top with Cheese:
- Add the air-fried potatoes to the skillet and stir gently to coat everything in the sauce. Sprinkle shredded mozzarella cheese across the top. Cover with a lid to melt the cheese or broil under the oven to get it bubbly and lightly browned. Everything should meld together into a creamy cheesy layer.
