Gave a new dish a whirl, and my guests were all about that encore serving.
1. Preheat your oven to 375 degrees F (190 degrees C). Grease a baking dish with a little oil or a spray of non-stick cooking spray.
2. In a large bowl, toss the chicken chunks with 1/4 cup cornstarch, salt, and black pepper until well-coated.
3. Arrange the coated chicken and chopped peppers in the prepared baking dish evenly.
4. In a saucepan over medium heat, combine the sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and onion powder. Stir until the mixture begins to bubble.
5. Add the slurry (water and cornstarch mixture) to the saucepan and continue stirring until the sauce thickens, about 2 minutes.
6. Pour the sauce over the chicken and peppers in the baking dish, making sure everything is evenly coated.
7. Bake in the preheated oven for about 45 minutes, or until the chicken is cooked through and the peppers are tender.
8. Serve hot, garnished with a sprinkle of fresh chopped green onions or sesame seeds if desired.
