Greek Lemon Chicken Soup

Ingredients:
– 2 tablespoons extra-virgin olive oil
– 1 small sweet onion, finely diced
– 2 stalks celery, finely diced
– 2 medium carrots, finely diced
– 2 cloves garlic, minced
– 1/2 teaspoon kosher salt
– 1/8 teaspoon black pepper
– 1/2 cup Arborio rice
– 6 cups low-sodium chicken stock
– 1 large bay leaf
– 2 cooked chicken breasts (6 ounces each), seasoned and shredded
– 1/3 cup fresh lemon juice
– 2 large eggs
– 2 1/2 tablespoons fresh dill, chopped
