Ham and Cheese Savory Pancakes with Parmesan Batter
This method produces golden-brown savory pancakes with a melty ham and cheese filling — soft on the inside, crispy on the outside.
1. Prepare the batter
In a large mixing bowl, combine the flour, grated parmesan, baking powder, and a pinch of salt. Add in the egg and milk, whisking until the batter is smooth and free of lumps. The consistency should be similar to pancake batter—pourable but slightly thick.
2. Divide and portion
Split the batter into 4 equal portions. You can do this by pouring each portion into a glass and using it as a measuring container. Pour out about ¾ of the batter from the glass into your preheated nonstick pan.
3. Add the fillings
Immediately place slices or small pieces of cheese and cooked ham in the center of the batter. Make sure to leave a small margin around the edges so the fillings stay sealed inside.
4. Cover with more batter
Using the remaining ¼ portion from the glass, spoon it over the ham and cheese to cover the filling completely.
5. Cook until golden
Cook the pancake over medium heat for 2–3 minutes on the first side, until golden brown and bubbles form on top. Flip and cook the other side for another 2–3 minutes until both sides are crispy and golden and the cheese is melted inside.
6. Serve and enjoy
Transfer to a plate and serve warm. Optionally, top with fresh herbs, sour cream, or a side of salad.
