Hands down, one of my all time favorite dishes!
Citrus-Herb Roast Chicken
Servings: Serves 4 to 6

Ingredients
– 1 whole chicken (approximately 4 to 5 pounds)
– 2 lemons, one zested and juiced, the other cut into wedges
– 4 cloves of garlic, minced
– 1/4 cup of fresh herbs (such as rosemary, thyme, and parsley), chopped, plus whole sprigs for stuffing
– 2 tablespoons olive oil
– 1 teaspoon of kosher salt, or to taste
– 1/2 teaspoon of freshly ground black pepper, or to taste
– 1 small onion, quartered
– 2 tablespoons unsalted butter, at room temperature
