Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until the apples are tender and the mixture is gooey, about 5-7 minutes.
Remove the saucepan from heat and let the apple mixture cool slightly.
Separate the biscuit dough and flatten each biscuit slightly with your hands.
Place a spoonful of the apple mixture onto the center of each biscuit. If using, sprinkle some chopped pecans over the apple mixture.
Fold the edges of the biscuit dough over the apple mixture, pinching to seal and form a pouch.
Place the filled biscuits seam-side down on the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
Drizzle with caramel sauce before serving, if desired.
Variations & Tips
For a nut-free version, simply omit the pecans. You can also experiment with different types of apples to vary the flavor; Granny Smith apples add a nice tartness, while Honeycrisp apples are sweeter. For a more indulgent treat, add a sprinkle of cinnamon sugar on top of the biscuits before baking. If you have picky eaters, consider serving the apple mixture on the side as a dip, allowing them to control how much they add to their biscuit.
