Homemade Bread Magic

Part 1: Make the Dough

  1. Activate the Yeast: In a large mixing bowl, combine warm milk, warm water, sugar, and dry yeast. Stir gently and let it sit for 5–10 minutes until frothy.

  2. Knead the Dough: Add vegetable oil, salt, and 3 cups of flour. Stir until a shaggy dough forms. Gradually add the remaining flour, kneading for 8–10 minutes until smooth and elastic. The dough should be soft but not sticky.

  3. First Rise: Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

Part 2: Prepare the Filling & Assemble

  1. Prepare the Filling: In a bowl, combine red pepper, yellow pepper, tomato, green tomato, and green peppers. Season with salt, pepper, and optional herbs or cheese.

  2. Shape the Bread: Punch down the dough and divide it into two portions. Roll one portion into a rectangle or circle (¼-inch thick) and place on a parchment-lined baking sheet.

  3. Fill and Seal: Spread the vegetable filling evenly, leaving a border around the edges. Roll out the second portion of dough and place it on top. Seal the edges and trim excess dough if necessary.

Part 3: Final Rise and Bake

  1. Second Rise: Cover and let the bread rise for 30 minutes until slightly puffy.

  2. Bake: Preheat oven to 375°F (190°C). Brush with egg wash (optional) and cut a few slits in the top. Bake for 30–35 minutes, until golden brown and hollow-sounding when tapped.

  3. Serve: Cool slightly before slicing. Serve warm, plain or with yogurt, sour cream, or tzatziki for dipping.
