1/2 cup corn (fresh, canned, or thawed from frozen)
1/4 cup diced red onion
1/4 cup diced red bell pepper
1 tablespoon chopped cilantro
1 tablespoon lime juice
Salt, to taste
Instructions:
Prepare Chicken:
In a bowl, mix shredded chicken with honey, lime juice, chili powder, salt, and pepper. Set aside.
Make Corn Salsa: In a separate bowl, combine corn, red onion, bell pepper, cilantro, lime juice, and a pinch of salt. Mix well.
Assemble Avocados: Scoop a small amount of flesh from each avocado half to create space. Fill each with honey lime chicken.
Top with Salsa: Spoon corn salsa over the stuffed avocados.
