Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the olive oil, Dijon mustard, garlic powder, onion powder, salt, and pepper.
Add the cauliflower florets to the bowl and toss until they’re evenly coated with the mustard mixture.
Spread the coated cauliflower florets in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown.
Remove from the oven and let cool slightly before transferring to a serving platter.
Garnish with fresh parsley before serving.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or a dash of hot sauce to the mustard mixture. If you’re not a fan of cauliflower, try using radishes or turnips as a low-carb alternative. You can also experiment with different types of mustard, such as whole grain or spicy brown, to change up the flavor profile. For an added crunch, sprinkle some grated Parmesan cheese over the poppers before baking.
