Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced apples, 1/2 cup of sugar, cinnamon, and lemon juice. Toss until the apples are well coated.
Transfer the apple mixture into a greased 9-inch baking dish or individual ramekins.
In another bowl, whisk together the flour, 1/4 cup of sugar, baking powder, and salt.
Add the melted butter, milk, and vanilla extract to the dry ingredients, stirring until just combined.
Spoon the batter over the apples, spreading it out as evenly as possible.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the apples are tender.
Let the cobbler cool slightly before serving. Enjoy warm with your favorite topping.

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. You can also experiment with different spices like nutmeg or allspice for a deeper flavor.
