If you are in a bind, this recipe is fabulous! Easy and tasty!

Bake: Cover the dish tightly with aluminum foil and bake for 45 minutes, or until the rice has absorbed all the liquid and is tender.
Add Eggs and Protein: Remove the dish from the oven. Pour 2 beaten eggs over the cooked rice and add 1 cup of cooked and diced chicken, ham, or tofu. Stir everything together. The residual heat will cook the eggs through.
Season and Garnish: Season with salt and pepper to taste, and garnish with sliced green onions before serving.
