I’m trying to play it cool, but I’m head over heels for this dish
1. Preheat the oven to 375°F (190°C).
2, Peel and grate the chilled potatoes into a large mixing bowl.
3. In a skillet, melt the butter over medium heat and sauté the shallots and garlic until soft and fragrant.
4. Add the sautéed shallots, garlic, salt, black pepper, sour cream, and 2 cups of cheddar cheese to the grated potatoes. Fold carefully so that the potatoes are still shredded.
5. Spread the potato mixture evenly in a greased baking dish. Top with the remaining 1 cup of cheddar cheese and grated parmesan.
6. Bake in the preheated oven for about 30 minutes, or until the casserole is bubbly and the top is golden brown.
