Preheat your oven to 350°F (175°C).
In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, and vanilla extract. Toss until the peaches are evenly coated.
Transfer the peach mixture to a 9×9-inch baking dish and spread it out evenly.
In another bowl, mix together the flour, oats, brown sugar, and salt.
Add the chilled butter cubes to the flour mixture and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
Stir in the sliced almonds.
Sprinkle the crumb mixture evenly over the peaches in the baking dish.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling.
Allow the crumble to cool slightly before serving.
Variations & Tips
For a gluten-free version, substitute the all-purpose flour with almond flour or a gluten-free flour blend. You can also experiment with different nuts, such as pecans or walnuts, for a different flavor profile. To add a hint of spice, consider incorporating a teaspoon of cinnamon or nutmeg into the crumb topping. If fresh peaches aren’t available, canned or frozen peaches can be used, though you may need to adjust the sugar content depending on their sweetness.
