A delicious and healthy way to enjoy the flavors of stuffed peppers! Zucchini halves are loaded with a robust Italian sausage and vegetable filling, topped with melted cheese, and baked to perfection.

Ingredients

  • 4 medium zucchinis

  • 1 cup corn (fresh or frozen, thawed if frozen)

  • 1 ½ cups marinara or spaghetti sauce

  • ½ cup parmesan cheese, grated

  • 1 ½ cups mozzarella cheese, shredded

  • Fresh basil, chopped (for garnish)
