Directions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with aluminum foil for easy clean-up.
2. In a large skillet, cook the ground beef over medium heat until browned; drain any excess fat.
3. Stir in the crushed pineapple, ketchup, brown sugar, soy sauce, garlic powder, and onion powder to the skillet with the beef. Let the mixture simmer for about 10 minutes until it thickens a bit, stirring occasionally.
4. While the mixture is simmering, split the baguette in half lengthwise, and then crosswise, so you have four pieces. Place them cut side up on the lined baking sheet.
5. In a small bowl, mix together melted butter and minced garlic, and brush it on the cut sides of the baguette.
6. Spread the sloppy joe mixture evenly over the bread and sprinkle with shredded mozzarella cheese.
7. Bake for 10-12 minutes, or until the cheese is bubbly and starting to brown.
8. Sprinkle with fresh parsley for garnish. Let it cool for a couple of minutes, then slice and serve.
Variations & Tips
– For a lighter version, substitute ground turkey or chicken for the beef.
– If your family has a penchant for spice, feel free to mix a little bit of crushed red pepper flakes into the sloppy joe mixture.
– Use Hawaiian sweet bread for an extra touch of island flavor if it is available.
– Picky eaters in the house? Try making a small separate batch without pineapple or use half the amount suggested.
– Remember, the key to perfect garlic bread is watching the oven carefully, as broilers can go from golden to burned in a flash. Keep an eye on it for the last few minutes!
