1. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are fully coated and start to stick together.
2. Divide the crumb mixture evenly among your jars, pressing it down to create a firm base.
3. In a separate bowl, beat the softened cream cheese until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until well combined.
4. In another bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
5. Spoon the cream cheese mixture over the graham cracker base in each jar, filling them about three-quarters full.
6. Top each jar with a generous spoonful of cherry pie filling.
7. Seal the jars and refrigerate for at least 2 hours, or until set.
8. Before serving, garnish with fresh cherries and mint leaves if desired.

For those looking to switch things up, consider using different pie fillings such as blueberry or strawberry. You can also add a layer of chocolate ganache between the graham cracker crust and cream cheese mixture for an extra indulgent treat. For a lighter version, substitute regular cream cheese with reduced-fat cream cheese and use half the amount of sugar. This dessert can also be made gluten-free by using gluten-free graham crackers.
