Lemony Chicken Ricotta Meatballs Over Garlic Spinach Orzo
For the Garlic Spinach Orzo:
- 1 cup orzo pasta
- 3 cups chicken broth (or water)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups fresh spinach, chopped
- Juice of ½ lemon
- Salt and pepper, to taste
- Optional: Red pepper flakes (for heat)
For Garnish:
- Fresh parsley, chopped
- Extra lemon wedges
Instructions
Step 1: Prepare the Meatballs
- In a large mixing bowl, combine the ground chicken, ricotta, Parmesan, lemon zest, minced garlic, breadcrumbs, egg, salt, and pepper. Mix gently until just combined—be careful not to overmix!
