Lemony Chicken Ricotta Meatballs Over Garlic Spinach Orzo

For the Garlic Spinach Orzo:

  • 1 cup orzo pasta
  • 3 cups chicken broth (or water)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • Juice of ½ lemon
  • Salt and pepper, to taste
  • Optional: Red pepper flakes (for heat)

For Garnish:

  • Fresh parsley, chopped
  • Extra lemon wedges

Instructions

Step 1: Prepare the Meatballs

  1. In a large mixing bowl, combine the ground chicken, ricotta, Parmesan, lemon zest, minced garlic, breadcrumbs, egg, salt, and pepper. Mix gently until just combined—be careful not to overmix!
