Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Combine Dry Ingredients
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
Step 3: Mix Wet Ingredients
In a large mixing bowl, combine the melted butter and brown sugar. Whisk until smooth. Add the eggs one at a time, followed by vanilla extract, sour cream, and mashed bananas. Mix until everything is well incorporated.
Step 4: Bring It All Together
Gently fold the dry ingredients into the wet mixture with a spatula until just combined. Be careful not to overmix — this ensures a tender crumb.
Step 5: Create the Chocolate Batter
In a small bowl, mix cocoa powder and hot water until smooth. Transfer about 1 cup of the banana batter into this bowl and stir to create your chocolate layer.
Step 6: Layer and Marble
Pour half of the plain banana batter into the prepared loaf pan. Spoon half of the chocolate batter on top, then repeat with the remaining plain and chocolate batters.
To create the marbled effect, drag a butter knife or skewer through the batter in gentle figure-eight motions — just a few swirls are enough to create a stunning pattern.
Step 7: Bake to Perfection
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay). If the top browns too quickly, loosely tent it with foil during the last 10 minutes of baking.
Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
🍮 Making the Caramel Glaze
While the bread cools, prepare the glaze:

In a small saucepan, melt butter and brown sugar over medium heat. Stir constantly until the mixture begins to bubble.

Slowly whisk in the heavy cream and salt, and let it simmer gently for about 1 minute until slightly thickened.

Remove from heat, stir in vanilla extract, and let cool for 5 minutes.

Gradually whisk in powdered sugar until smooth and glossy. If too thick, add a teaspoon of cream; if too thin, add a bit more sugar.
Step 8: Glaze and Finish
Once the banana bread is completely cool, drizzle the warm caramel glaze generously over the top, letting it cascade down the sides for that irresistible bakery-style look. Allow the glaze to set for 10–15 minutes before slicing.
