🐟 Mediterranean Baked Salmon with Feta & Sun-Dried Tomatoes

Ingredients (Serves 4):

  • 4 salmon fillets (about 6 oz each)

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • Juice of 1 lemon

  • 1 tsp dried oregano (or 1 tbsp fresh)

  • Salt and black pepper, to taste

Topping:

  • 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup Kalamata olives, sliced (optional)

  • 2 tbsp chopped red onion (optional)

  • 2 tbsp chopped fresh parsley or basil


Instructions:

  1. Preheat oven to 400°F (200°C).

    • Line a baking dish with foil or parchment paper for easy cleanup.

  2. Prepare the salmon:

    • Place salmon fillets in the baking dish, skin-side down.

    • Drizzle with olive oil and lemon juice.

    • Rub garlic onto each fillet and season with oregano, salt, and pepper.

  3. Add toppings:

    • In a small bowl, mix together sun-dried tomatoes, feta, olives (if using), and red onion.

    • Spoon the mixture evenly over each piece of salmon.

  4. Bake:

    • Bake for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork (internal temp of 145°F / 63°C).

    • Optional: Broil for 1–2 minutes at the end to lightly brown the feta.

  5. Garnish and serve:

    • Sprinkle with fresh parsley or basil before serving.

    • Serve with a side of couscous, quinoa, rice, or roasted vegetables.


🫒 Optional Add-Ons:

  • Drizzle with a little balsamic glaze or a squeeze of extra lemon.

  • Add chopped artichoke hearts or spinach to the topping mix for more veggie flavor.
