Mock Chicken Salad

Preparation

1. Add chickpeas to a large bowl and mash them until they are broken up into a paste but still a bit chunky.
2. Add in mayonnaise, lemon juice, celery, onion, carrot, parsley, dill, tarragon powder, garlic powder, and onion powder. 3. Season with salt and pepper and mix to combine. You can chill the salad before serving or serve it right away. It’s nice to serve between toasted wheat bread or alongside a bread of lettuce.
