Peel onions and slice into ½-inch thick rings.
-
Separate into individual rings, choosing medium and large ones for stuffing.
2. Stuff with mozzarella

Place a small pinch of mozzarella between two onion rings of similar size, pressing gently to seal the edges.
-
Repeat with remaining rings.

-
Dish 1: Flour seasoned with salt and pepper.
-
Dish 2: Beaten eggs.
-
Dish 3: Breadcrumbs mixed with Parmesan.
4. Bread the rings
-
Dredge each stuffed onion ring in flour, shaking off excess.
-
Dip in egg until fully coated.
-
Roll in breadcrumb-Parmesan mixture, pressing lightly to help crumbs stick.
5. Chill
-
Place breaded rings on a baking sheet and refrigerate for 20 minutes to set.
6. Fry the onion rings
-
Heat oil in a deep pot to 350°F (175°C).

Fry 2–3 rings at a time for 2–3 minutes, or until golden brown.
-
Transfer to paper towels to drain.
7. Make the garlic butter
-
In a small saucepan, melt butter.
-
Add garlic and cook for 1 minute until fragrant (do not brown).
8. Serve
-
Arrange onion rings on a platter.
-
Drizzle with warm garlic butter and serve immediately.
Serving Tip
These onion rings are best enjoyed fresh out of the fryer with a dipping sauce like marinara, ranch, or spicy aioli.
