My 2nd time making these as my hubby is obsessed. Doubled the recipe so I have plenty in the freezer ready to go
1 pound uncooked sausage (spicy sausage can be used)
1 can Rotel diced tomatoes and green chilies, drained (10 ounces)
8 ounces softened cream cheese
1.5 cups Bisquick
2 cups shredded Mexican cheese blend

Instructions:
1. Preheat your oven to 400°F. Grease baking sheet.
2. In a large mixing bowl, combine the uncooked sausage, softened cream cheese, drained Rotel diced tomatoes and green chilies, Bisquick, and shredded Mexican cheese blend. Mix everything until well combined.
3. Shape the mixture into bite-sized balls, roughly 1 to 1.5 inches in diameter, and place them on a baking sheet.
4. Bake in the preheated oven for about 20 minutes, or until the sausage balls are golden brown and cooked through.
Remove from the oven and allow them to cool slightly before serving. These Sausage Ball Bites are delicious as an appetizer or party snack. Enjoy!
