Grease the inside of your slow cooker to prevent sticking.
Sprinkle 1 cup of brown sugar evenly at the bottom of the slow cooker.
Place the gammon joint on top of the brown sugar layer.
Cover the gammon with the remaining 1/2 cup of brown sugar.
Set the slow cooker to low heat and cook for 8 hours, or until the gammon is tender.
Once cooked, carefully remove the gammon from the slow cooker and tent it with foil to keep warm.
Pour the cooking liquid into a saucepan and simmer over medium heat until it reduces to a thick glaze.
Slice the gammon and drizzle the glaze over the slices before serving.

For a different flavor profile, try adding a few cloves, a cinnamon stick, or a splash of apple cider to the slow cooker for a spiced twist.
