My family went crazy for this dish. I’m definitely making a bigger batch next time.

1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.
2. Place the diced potatoes and sliced onions in a large bowl.
3. Drizzle the olive oil over the potatoes and onions, and toss to coat evenly.
4. Sprinkle the salt, black pepper, garlic powder, dried rosemary, and dried thyme over the mixture, then toss again to ensure everything is well-seasoned.
5. Spread the potatoes and onions out in a single layer on the prepared baking sheet.
6. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, and the onions are caramelized. Be sure to stir the mixture halfway through cooking for even roasting.
