My hubby says this is his favorite side dish of all time!
Instructions:
1. Preheat oven to 375°F (190°C).
2. Sauté onions in 2 tbsp oil until soft; set aside. Cook and crumble bacon; set aside.
3. In a saucepan, melt 4 tbsp butter, whisk in 4 tbsp flour, and cook for 1-2 mins to form a roux.
4. Gradually whisk in 3 cups of milk until the sauce thickens. Season with salt and pepper.
5. Grease a 9×13-inch baking dish. Layer potatoes, onions, bacon, cheese, and sauce, finishing with cheese on top.
6. Cover with foil and bake for 45 mins. Remove foil and bake for 20-30 mins until golden brown and bubbly.
Let cool slightly before serving. Enjoy your loaded scalloped potatoes!
