My Italian neighbor shared this dish with us and we just had to get the recipe!
Baked Mostaccioli with Spring Vegetables
Servings: 6
Ingredients
1 lb mostaccioli pasta
2 tablespoons olive oil
1 cup chopped asparagus
1 cup sliced bell peppers
1 cup cherry tomatoes, halved
1 small zucchini, sliced
3 cloves garlic, minced
Salt and pepper to taste
1 tsp dried Italian herbs
2 cups marinara sauce
1 cup ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil for garnish
