Preheat Oven
Preheat your oven to 375°F (190°C). -
Arrange Ingredients
In a large oven-safe pan or baking dish, arrange the sliced smoked sausage, quartered potatoes, diced green pepper, and diced yellow pepper in a single layer. -
Add Butter and Oil
Dot the top of the sausage and vegetables with small cubes of butter (2 tablespoons total). Drizzle the olive oil evenly over everything. -
Season
Sprinkle the oregano, basil, and black pepper evenly over the top. -
Bake Covered
Cover the pan tightly with a lid or aluminum foil. -
Bake Until Tender
Bake for 40–50 minutes, or until the potatoes are tender and fully cooked. -
Serve
