My mother used to make this and it was delicious
Preheat oven: Preheat oven to 220°C (conventional).
Prepare potato crescendo:
In a large bowl, toss potato slices with olive oil, garlic powder, paprika, salt, and pepper to coat evenly.
Prepare onion overture:
In a separate bowl, combine balsamic vinegar, honey, olive oil, salt, and pepper. Add onion rings and mix well until evenly coated.
Assemble and bake:
Arrange seasoned potato slices in a single layer on a baking sheet. Sprinkle marinated onions generously over the top.
Bake in the preheated oven for 30–35 minutes, or until golden brown and crispy.
