1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix together the Caesar dressing, chopped artichoke hearts, squeezed spinach, mozzarella cheese, half of the Parmesan cheese, minced garlic, salt, and black pepper.
3. Lay the chicken breasts in a single layer in a greased baking dish.
4. Spread the spinach and artichoke mixture evenly over the chicken.
5. Sprinkle the breadcrumbs and the remaining Parmesan cheese on top.
6. Bake in the preheated oven for 30 – 35 minutes, or until the chicken is cooked through and the topping is golden brown.
7. Let it rest for 5 minutes before serving to allow the flavors to meld together.
