My relatives are addicted to this recipe and pester me for it all the time, but it’s totally no sweat to make.
Directions
1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
2. In a large bowl, mix together the balsamic vinegar, olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3. Add the steak to the bowl, turning to coat it thoroughly with the marinade. Set aside to marinate for at least 15 minutes.
4. In another bowl, toss the halved baby potatoes with a drizzle of olive oil and a pinch of salt and pepper.
5. Spread the potatoes out on the prepared baking sheet and bake for about 20 minutes.
6. After 20 minutes, remove the potatoes from the oven and push them to the edges of the baking sheet. Place the marinated steak in the center of the baking sheet.
7. Return the sheet to the oven and bake for an additional 15-20 minutes, or until the steak reaches your desired level of doneness and the potatoes are tender.
8. Once cooked, remove the baking sheet from the oven. Let the steak rest for about 5 minutes before slicing
9. Garnish with chopped fresh parsley and serve warm.
Variations & Tips
For a twist, you can add other root vegetables like carrots or parsnips alongside the potatoes. If you have picky eaters, try cutting the steak into smaller pieces before marinating and baking; this can make it easier for little ones to enjoy. For a touch of heat, add a pinch of red pepper flakes to the marinade. Additionally, if you have some mushrooms on hand, toss them in with the potatoes for an earthy addition to the dish.
