Sausage and peppers on a fresh hoagie roll with melted cheese make a classic New York street food sandwich and die-hard fans are legion. But if you don’t live in or near NYC, what are ‘ya gonna do? This slow-cooker version packs all the intense flavor of the beloved classic. Better still, it’s a breeze to make. Btw, you can also enjoy this dish without the bun and as is!
This is a sandwich for true sandwich lovers. Sweet Italian sausage is slow simmered with sliced onions and two kinds of peppers and then spooned over a cheesy, toasted hoagie roll. Bring your appetite and plenty of napkins.

Slow Cooker Sausage and Peppers

Ingredients
1 tablespoon extra-virgin olive oil
1 ½ pounds sweet Italian sausage, loose
1 (28-ounce) can fire-roasted tomatoes
1 (8-ounce) can tomato sauce
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
Serving suggestion:
16 slices cheese (provolone or mozzarella)
8 hoagie rolls
Directions
1. In a large skillet over medium heat, heat the olive oil. Add the sausage and cook, stirring frequently and breaking up the meat, for about 5 minutes, until the meat is nicely browned.
2. Transfer the meat to your slow cooker. Add the tomatoes, tomato sauce, onion, and peppers and stir to mix.
3. Cover the slow cooker and cook on low for 7 hours.
4. Serving suggestion: Split the rolls and place 2 slices of cheese on each. Toast them under the broiler until the cheese melts and begins to bubble. Spoon some of the hot sausage mixture into each roll and serve immediately.
