My Thai friend taught me this, and we’ve been making it regularly since!

12 oz rice noodles
1 lb shrimp, peeled and deveined
2 tbsp vegetable oil
3 eggs, beaten
1 cup bean sprouts
1/2 cup shredded carrots
1/4 cup chopped green onions
1/2 cup crushed peanuts
1/4 cup fresh cilantro, chopped
2 cloves garlic, minced
1/4 cup soy sauce
1/4 cup fish sauce
2 tbsp rice vinegar
2 tbsp brown sugar
1 lime, cut into wedges
