The Incantation: Brewing Your Poison Apples
Step 1: Prepare the Apples
Thoroughly wash and dry your apples. Any moisture will prevent the candy from sticking. Firmly push a wooden stick into the stem end of each apple. Set them on a parchment-lined tray that has been lightly greased with cooking spray.
Step 2: Conjure the Candy Syrup
In your saucepan, combine the sugar, corn syrup, water, cream of tartar (if using), and food coloring. Stir gently over medium heat just until the sugar dissolves. Once it begins to boil, stop stirring entirely. Insert your candy thermometer.
