Polish Hamburgers (Klupskies)

 

Instructions

1. Prepare the Patties:
Line a baking sheet with parchment paper. In a large bowl, combine the ground beef, ground pork, crushed saltines, milk, beaten eggs, minced onion, minced bell pepper, dill, parsley, garlic powder, and nutmeg. Generously season with salt and pepper. Using your hands, mix gently until all ingredients are just combined—avoid overmixing.

2. Form and Rest:
Divide the mixture into six equal portions and shape them into patties, about 2 inches thick. Place them on the prepared baking sheet and let them rest at room temperature for 30 minutes. This helps them hold their shape while cooking.

3. Brown the Patties:
In a large skillet, heat the 2 tablespoons of butter over medium-high heat. Working in batches to avoid crowding the pan, add 2-3 patties. Sear until a deep golden-brown crust forms on the first side, about 5-7 minutes. Carefully flip and sear the other side until browned. Transfer the browned patties to a plate lined with paper towels. Repeat with the remaining patties.

4. Make the Mushroom Sauce:
Reduce the heat to medium. Add the 1/4 cup of butter to the same skillet. Once melted, add the sliced mushrooms and cook until they have softened and released their moisture, about 5 minutes. Add the minced garlic and Worcestershire sauce, cooking for another minute while scraping up any browned bits from the bottom of the pan.

5. Simmer the Klupskies:
Sprinkle the flour over the mushrooms and stir constantly for 1 minute to cook off the raw flour taste. Gradually pour in the beef stock, whisking continuously until the sauce is smooth and begins to thicken. Bring the sauce to a gentle simmer.

Carefully return all the patties to the skillet, nestling them into the sauce. Cover the skillet with a lid, reduce the heat to low, and let it simmer gently for 30 minutes. The patties will cook through and become incredibly tender.

6. Finish and Serve:
Uncover the skillet and remove it from the heat. Stir in the sour cream until fully incorporated into the sauce. Taste the sauce and adjust seasoning with additional salt and pepper as needed.

Serve the klupskies hot, smothered in the creamy mushroom sauce. They are perfect over mashed potatoes, egg noodles, or with a side of crusty bread to soak up every bit of the delicious sauce. Enjoy
