1 pork tenderloin
1 large onion (julienned)
3 garlic cloves (finely chopped)
350g mushrooms (cleaned and cut into halves or quarters)
1 can of beer (approx. 330ml, blonde or dark according to your taste)
200g chicken stock or water
A handful of dried apricots (cut into small pieces)
Extra virgin olive oil
Salt and pepper to taste
