Step 1: Prep the Veggies
Shred the Cabbage: Finely slice the cabbage with a sharp knife or mandoline. Add to a large salad bowl.
Slice the Cucumber: Thinly slice into rounds or ribbons. Add to the cabbage.
Add the Onion: Slice the red onion finely and mix it in.
Chop the Herbs: Mince the dill and parsley and sprinkle over the vegetables.
Step 2: Whisk the Dressing
In a small bowl, mix together the olive oil, apple cider vinegar, lemon juice, honey (or agave), salt, and pepper.
Stir until well combined and emulsified.
Step 3: Put It All Together
Dress the Salad: Pour the dressing over the salad ingredients.
Toss to Combine: Gently toss until everything is evenly coated.
Chill Before Serving: Let the salad rest in the fridge for at least 30 minutes so the flavors can meld.
