  • 1 Β½ to 2 lbs (700–900 g) beef stew meat, cut into chunks

  • 2 tablespoons flour (for dredging)

  • 2 tablespoons butter or olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 3–4 carrots, peeled and sliced

  • 2–3 potatoes, peeled and cubed

  • 2 stalks celery, chopped (optional)

  • 3 cups beef broth (or water with a bouillon cube)

  • 1 tablespoon tomato paste (or Β½ cup diced tomatoes)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 bay leaf (optional)

  • Salt and pepper, to taste
