1 cooked chicken breast
2 medium carrots
2 tablespoons cream cheese or ricotta
2 tablespoons mayonnaise (optional for a smoother texture)

Cook the chicken breast in salted, spicy water (you can steam or boil it, if desired).
Boil or steam the carrots until tender.
In a food processor or high-speed blender, combine the pulled chicken, diced carrots, cream cheese, mayonnaise, garlic (if using), and a drizzle of oil or lemon juice.
Blend until smooth.
Season with salt and pepper to taste.
