Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup Ritz cracker crumbs (about one sleeve of crackers)
– 1/2 teaspoon garlic powder
– 1/2 teaspoon smoked paprika (regular paprika is fine too)
– 1/2 teaspoon onion powder
– Salt and black pepper to taste
– 1/2 cup unsalted butter, melted
Directions:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for an easy clean-up—my go-to trick for weeknights.
2. Crush your Ritz crackers to fine crumbs. You can do this in a food processor or pop them in a zip-top bag and roll with a rolling pin—a great stress reliever, by the way.
3. In a shallow dish, mix the cracker crumbs with garlic powder, smoked paprika, onion powder, and a pinch of salt and pepper. This blend is the secret that’ll make the chicken sing.
4. Dip each chicken breast into the melted butter—don’t be shy, coat it well! Then press into the crumb mixture until the chicken is fully coated in that golden, crumbly goodness.
5. Place each coated chicken breast on the prepared baking sheet and drizzle with any remaining butter. Trust me—it makes it all the more decadent.
6. Bake for about 25-30 minutes, or until the chicken is cooked through (165°F internal temperature) and the crust is golden and, you guessed it, ridiculously crispy.
