Served this to the family last night and we ended up with an empty casserole!

Ingredients
– 2 tablespoons unsalted butter, plus extra for greasing the dish
– 1 medium onion, finely chopped
– 2 garlic cloves, minced
– 3 tablespoons all-purpose flour
– 2 cups whole milk
– 1 cup chicken broth
– 2 pounds Yukon Gold potatoes, thinly sliced
– 2 cups cooked ham, diced
– 1 cup sharp cheddar cheese, grated
– 1/2 cup grated Parmesan cheese, for topping
– Salt and pepper, to taste
– 1/2 teaspoon paprika (optional, for a bit of color and warmth)
– Fresh parsley, chopped (for garnish)
