Step 1: Prepare the Potatoes
- Peel and cube the potatoes into bite-sized pieces. Rinse them under cold water to remove excess starch, then drain well.
Step 2: Combine Ingredients
- In a large mixing bowl, whisk together the melted butter, sour cream, milk, and Lipton Onion Soup Mix until smooth.
- Add the cubed potatoes to the mixture, tossing gently to coat each piece evenly.
Step 3: Transfer to the Slow Cooker
- Pour the potato mixture into your slow cooker, spreading it out evenly.
- Sprinkle half of the shredded cheese over the top.
Step 4: Cook Until Tender
- Cover the slow cooker and cook on LOW for 6–8 hours or HIGH for 3–4 hours, or until the potatoes are tender and the sauce has thickened.
- During the last hour of cooking, stir the mixture gently and sprinkle the remaining cheese on top. Replace the lid to allow the cheese to melt fully.
Step 5: Season & Serve
- Once done, give the potatoes a final stir to combine everything evenly.
- Taste and adjust seasoning with additional salt, pepper, or more soup mix if desired.
- Garnish with fresh chives or sliced green onions before serving.
Tips for Success
- Don’t Overcook the Potatoes : While they should be soft, avoid letting them turn mushy by checking their texture after the minimum cooking time.
- Customize the Cheese : Swap cheddar for mozzarella, Parmesan, or a blend of cheeses for different flavor profiles.
- Add Vegetables : Stir in sautéed mushrooms, bell peppers, or spinach for added nutrition and color.
- Make It Heartier : Add cooked bacon bits or crumbled sausage for a protein boost.
