Slow Cooker Thick & Chunky Beef Stew

Whenever I serve this dish, the house smells fantastic. It’s a hit among friends and family — a comforting, hearty meal that warms both body and soul.

Ingredients

1 pound lean cubed chuck beef, at room temperature

4 cups beef broth

1 cup red wine (optional)

3 carrots, sliced

3 stalks celery, sliced

½ cup roasted bell peppers, chopped

2 potatoes, peeled and diced

1 yellow onion, chopped

2 cloves garlic, minced

1 bay leaf

3 sprigs fresh thyme or 2 tsp dried thyme

¼ cup all-purpose flour

Olive oil

Salt and pepper, to taste
