Ingredients
6 large russet potatoes, scrubbed
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup chopped green onions
1/4 cup butter, melted
Salt and pepper to taste

Directions
Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
Poke the potatoes with a fork, place them on a baking sheet, and bake for about 1 hour, or until they are tender when pierced with a fork. Let them cool slightly.
Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a large bowl. Mash the potatoes lightly.
Add the sour cream, cheddar cheese, crumbled bacon, green onions, melted butter, salt, and pepper to the bowl, and mix until everything is well combined.
Spread the potato mixture evenly into the prepared baking dish.
Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
