Procedure
Beat the eggs with the sugar until light and fluffy.
Add the oil, orange juice, and grated zest and mix well.
Sift the flour and baking powder together and gradually fold into the batter. Add a pinch of salt.
Pour the mixture into the muffin cups, filling them two-thirds full.
Bake in a preheated oven at 180°C for 20-25 minutes, until golden brown and puffed up.
Cool on a wire rack and sprinkle with powdered sugar, if desired.
