Instructions
1. Sauté Aromatics

In a large pot, heat olive oil over medium heat.

Add chopped onion and garlic, sauté until soft and fragrant.
2. Cook Carrots & Ginger

Add chopped carrots and grated ginger.

Stir for a couple of minutes to combine flavors.
3. Add Broth

Pour in broth and bring the mixture to a simmer.

Cook until carrots are tender (about 20–25 minutes).
4. Blend the Soup

Use an immersion blender or countertop blender to puree the soup until smooth and creamy.

Season with salt and pepper to taste.
