Soothing Carrot Soup

Instructions

1. Sauté Aromatics

  • In a large pot, heat olive oil over medium heat.

  • Add chopped onion and garlic, sauté until soft and fragrant.

2. Cook Carrots & Ginger

  • Add chopped carrots and grated ginger.

  • Stir for a couple of minutes to combine flavors.

3. Add Broth

  • Pour in broth and bring the mixture to a simmer.

  • Cook until carrots are tender (about 20–25 minutes).

4. Blend the Soup

  • Use an immersion blender or countertop blender to puree the soup until smooth and creamy.
