Sour Cream Rhubarb Coffee Cake

Ingredients (Serves 8–10)

For the Cake:

      • 1½ cups all-purpose flour
      • 1 cup granulated sugar
      • 1 tsp baking powder
      • ½ tsp baking soda
      • ½ tsp salt
      • ¼ tsp ground cinnamon
      • ¾ cup sour cream
      • 2 large eggs
      • 1 tsp vanilla extract
      • 2 cups chopped fresh rhubarb (about 4–5 stalks)
      • Optional: ½ cup chopped walnuts or pecans for added crunch
