Sour Cream Rhubarb Coffee Cake
Ingredients (Serves 8–10)
For the Cake:

- 1½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ tsp ground cinnamon
- ¾ cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups chopped fresh rhubarb (about 4–5 stalks)
- Optional: ½ cup chopped walnuts or pecans for added crunch
