Instructions
1. Prepare the Crust (if making homemade):

In a bowl, mix flour and salt.

Add cold butter and cut it into the flour using a pastry cutter or fork until it resembles coarse crumbs.

Gradually add ice water, 1 tbsp at a time, mixing until the dough comes together.

Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

Roll out the dough on a floured surface and fit it into a 9-inch (23 cm) pie dish. Trim edges and prick the bottom with a fork.

Chill for 15 minutes, then blind-bake at 190°C (375°F) for 10–12 minutes.
2. Prepare the Filling:

In a pan, sauté onion and garlic until soft. Add spinach and cook until wilted (if using frozen, squeeze out excess water).

In a bowl, whisk eggs, cream, milk, salt, pepper, and nutmeg.
3. Assemble & Bake:

Spread spinach mixture over the crust. Sprinkle cheese evenly.

Pour the egg mixture over the top.

Bake at 190°C (375°F) for 30–35 minutes, until set and golden.

Let cool 10 minutes before slicing.
Enjoy warm or at room temperature!
