Equipment:
-
Medium saucepan
-
9×9-inch square baking pan
-
Parchment paper (optional, for easy removal)
-
Wooden spoon or silicone spatula
-
A whisk
-
A large mixing bowl
Instructions:
Step 1: Prepare Your Pan
Begin by lining a 9×9-inch square baking pan with parchment paper, leaving a bit of an overhang on each side. This will make it easy to lift the fudge out of the pan after it has cooled and set. If you prefer, you can also lightly grease the pan with butter or non-stick spray.
Step 2: Melt the Butter and Sugar
In a medium saucepan, combine the granulated sugar and butter over medium heat. Stir constantly until the butter is fully melted and the sugar begins to dissolve, creating a smooth base. Be patient and stir continuously to avoid any sugar crystals from forming.
Step 3: Add the Sweetened Condensed Milk and Whole Milk
Once the butter and sugar are combined, stir in the sweetened condensed milk and whole milk. Continue to cook the mixture over medium heat, stirring constantly. The key here is to ensure that everything melts together smoothly without scorching. You’ll begin to see the mixture thicken and become creamy.
Step 4: Bring to a Gentle Boil
Increase the heat slightly to bring the mixture to a gentle boil. Let it cook for about 4-5 minutes, still stirring constantly, until it reaches a soft ball stage. To check for this stage, you can drop a small amount of the fudge mixture into a glass of cold water. If it forms a soft ball that can be easily flattened, it’s ready to move on to the next step. Be sure to keep stirring to prevent it from burning.
Step 5: Remove from Heat and Add Flavor
Once the fudge reaches the right consistency, remove it from the heat. Stir in the salt and vanilla extract to enhance the flavors. If you’re adding white chocolate chips for an extra creamy texture, this is the time to stir them in. The residual heat will melt the chocolate, creating an even creamier fudge base.
Step 6: Mix in the Powdered Sugar
Gradually fold in the sifted powdered sugar, a little at a time, until the mixture is smooth and well incorporated. The powdered sugar is what gives the fudge its perfect, dense, and creamy texture. Continue to stir until no lumps remain and the fudge is smooth and glossy.
Step 7: Add Nuts (Optional)
If you’re including chopped nuts for some added crunch and texture, gently fold them into the fudge mixture at this point. Nuts like toasted pecans, walnuts, or even hazelnuts work wonderfully and give a delicious contrast to the creamy fudge. But if you prefer a smoother version, feel free to skip the nuts.
Step 8: Pour into the Prepared Pan
Pour the fudge mixture into the prepared 9×9-inch pan, using a spatula to spread it evenly. Smooth out the top for an even finish, and lightly tap the pan on the counter to remove any air bubbles.
Step 9: Cool and Set
Allow the fudge to cool at room temperature for about 30 minutes, then place it in the refrigerator to fully set for at least 2 hours. The fudge will firm up and become perfect for slicing into squares.
Step 10: Slice and Serve
Once the fudge is set, lift it out of the pan using the parchment paper overhang, and place it on a cutting board. Use a sharp knife to cut the fudge into squares. The result should be creamy, dense, and melt-in-your-mouth goodness. Serve immediately or store in an airtight container for up to 2 weeks.
