How to Make Sweet Onion Pie
Step 1: Prep the crust
Preheat your oven to 350°F. Mix crushed crackers with 4 tablespoons of softened butter until well combined. Press the mixture into the bottom and slightly up the sides of an 8-inch pie dish. Pop it in the fridge while you prep the filling.
Step 2: Cook the onions
In a skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the sliced onions and garlic and sauté slowly—this isn’t a rush job. Let them cook for about 12 minutes until they’re soft and golden.
Step 3: Build the filling
Transfer the cooked onions to your prepared crust. In a separate bowl, whisk together the eggs, milk, salt, and chives. Pour this mixture over the onions, then sprinkle shredded cheddar cheese evenly across the top. Dust with a little paprika.
Step 4: Bake
Bake for about 35 minutes, or until the center is set and a knife comes out clean. Let it cool slightly, then garnish with fresh parsley before serving.
